We're less than a week away from Hack//Meat! One of the many highlights of the weekend-long event is the pig butchering demo that will take place from 2-4pm on Sunday, December 9. Tom Mylan of The Meat Hook (and esteemed judge for the hack) will walk attendees through the process of breaking down a half pig. Join us for the butchering demo and learn what to look for in a hog and how to make use of the whole animal!

ow all of the players making this demo possible work together to bring quality meat to the city. From the welfare organization that connects with the small farmer; the butcher who partners with the restaurant — all parties share transparency about production and process. This is the connection between farm and fork that is so important to increasing awareness and ultimately hacking the current meat system.
Animal Welfare Approved is donating a pig from B&Y Farms, a certified farm in the Finger Lakes Region of Central New York. The farmers delivered the pig to Jimmy's No 43 for cold storage. Tom Mylan will show up to Grind with very sharp tools to conduct the butchering demo. And Jimmy's No 43 will work with the butchered pig to feature different cuts on their a la carte menu. Proceeds from each plate will go to the Sandy hurricane relief effort to support recovery of Rockaway Beach concessions that were damaged by the storm.
